Cucumber Salad

Course Side Dish

Ingredients
  

  • 4 medium sized cucumbers peeled
  • 1/3 cup finely diced red onion or shallot
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 tsp dry mustart
  • 1 tsp italian seasoning
  • 1/4 tsp granulated garlic
  • 1/8 tsp salt
  • 1/8 tsp fresh ground black pepper
  • 1/8 tsp red pepper flakes
  • 1/2 tsp dill weed

Instructions
 

  • Cut cucumbers in half lengthwise, then cut each half in half lengthwise. Thinly slice and place in serving bowl. Add diced onion or shallot.
  • Whisk all other ingredients together vigorously and pour over cucumbers. Stir together and sprinkle with dill or a light dusting of parsley.
