Pecan Bars

A client and friend recently put me on to opening up a Medjool date and replacing the pit with a walnut…wow, a nutritious and delicious treat! So quick and easy too. And exchanging pecans further upgraded this indulgence…I know our pecan-farming clients in Georgia will appreciate that!

This delicacy reminds me so much of one of our favorite ooey-gooey holiday goodies, that I thought my Pecan Bar making days were over. But then my son Ben said, “Really?” and he said it in such a way, that I knew I was wrong!

So here’s my recipe for Pecan Bars. I’ll be making several pans over the holidays. We’ll eat some of them and give the rest away as gifts…like to our local business center that handles much of our mail. It’s a great way to show our appreciation for all they do for us.

Crust:

  • 1 ½ cup flour
  • ¼ cup sugar
  • ¼ tsp salt
  • ½  cup butter

Line a 9×9 pan with parchment paper and lightly grease. Cut butter into dry ingredients. Press into prepared pan and bake at 350 degrees for 20 minutes.

Filling

  • 2 eggs
  • ¾ cup corn syrup
  • ¾ cup sugar
  • 1 ½ Tbsp melted butter
  • ¾ tsp vanilla
  • 1 ¼ cups chopped pecans

In a bowl, mix eggs, corn syrup, sugar, melted butter and vanilla together. Stir in 1 ¼ cup chopped pecans and spread evenly over hot crust.

Bake at 350 degrees for 25 minutes or until set. Remove from pan and cut into squares.
